When you hire bartenders by the hour, remember these 3 simple rules.
A professional bartender needs at least 30 minutes before the first guest arrives. They need to set up the bar, chill the wine, prep the fruit garnishes, and organise the ice. They also need time at the end for pack-down.
Stick to the golden rule of 1 bartender per 30 guests for cocktail service.
Overestimate the ice. In the Auckland summer heat, ice melts rapidly. You don't just need ice for the actual drinks! You need bulk ice for tubs to keep the beer, champagne, and mixers cold before they are even poured.
